Rachael Ray s Smashed Cauliflower found it really expensive in the store, so I tried frozen...still so very good...everyone in my family LOVED it! She also said it was a low carb substitute for mashed potatoes. I am giving you MY recipe for the same dish.
Smashed Cauliflower Recipe - SO VERY GOOD. I let the broth boil down to almost nothing and then added the cheese and butter - let it "simmer" while constantly stirring even longer to get desired consistency. Very good!

For Steve, Creamy Mashed Cauliflower from Food.com: Darned Adkins Diet! This is a low-carb stand-in for mashed potatoes. The spices and cream that are added to steamed and pureed cauliflower give this dish the taste, texture and appearance of mashed potatoes. Serve this up with any entrée that goes well with mashed potatoes, and I swear you'll never miss the spuds.
