SOUTHWESTERN CORN DIP 3 (11 oz.) cans Mexi Corn, drained 1/2 cup mayonnaise 1 cup sour cream 3 green onions, chopped 3 jalapeno peppers, chopped 2 cups shredded cheddar cheese Mix all ingredients together in a medium-sized bowl. Cover and refrigerate. Serve with Fritos Scoops.
One-Pot Red Beans and Rice. Very good, definitely will make again! Didn't have chicken broth so I used beef broth, and I couldn't find creole seasoning, so we used pampered chef's southwestern seasoning. Just a light coating over the top then missed it in. Turned out really good.
