Squirrel Stew with Paprika and Greens - I know...it sounds awful but I actually had squirrel stew as a child. My Dad went hunting and squirrel is what he returned with. Showed me how to skin it and we cooked it - my Mom was quite upset when Dad told her what it was. But, I liked it!!! If I'm left with nothing to eat but squirrel, I'll eat it again. Survival is imperative.
Brunswick stew is a classic Southern dish featuring meat, chopped bell pepper, lima beans, and corn in a tomato base. Developed in 19th-century Virginia, this stew originally included squirrel meat (we opt here for chicken). This version uses flour to give the stew body and features garlic bread on the side. Garnish with fresh thyme sprigs.
