20 oz Porterhouse.  Bring meat to room temp, season liberally with sea salt, fresh crushed black pepper, and garlic powder.  Place cast iron skillet/grill pan and place in oven on top rack, while pre heating to 500 degrees.    Place steak on pan in oven for 4 minutes ( for inch and half thick steak, 5 for 2 inch).  After 4 minutes, turn on broiler (still at 500) and flip steak.  Cook for 4 minutes ( 8 minutes total), this will give you perfect medium rare.
