Pineapple Coconut Refrigerator Oatmeal - I find it's easier to make a single batch of 4 servings than the individual jars like the blog says to do. To make with steel cut oats: Boil 1/2 cup steel cut oats in 1 cup coconut milk and 1 cup water for 30 minutes.  Mix in 1 cup coconut milk, 1 cup fat free Greek yogurt, and 1 cup crushed pineapple. Refrigerate overnight.
