HOMEMADE TABASCO SAUCE I've been making salsa for decades, however, I never have really made a concentrated sauce like Tabasco. When I brought in a huge bush of Tabasco peppers, I decided to try and make my own--with great results! Here's how you can do it and it is easy; there is nothing like homegrown & homemade!
If you have extra hot peppers, pepper vinegar is a great condiment for meat or greens. Just boil a pint of vinegar, add a tsp. of salt, and pour it over your peppers. It will be ready to eat after a week and lasts indefinitely.
Homemade Tabasco Sauce: 1/3 cup Tabasco peppers 1 cup vinegar, your choice, white, cider, wine 2 garlic cloves 1 tsp. salt Simmer the peppers in the vinegar and salt, BRIEFLY, watching carefully, in a well-ventilated area. Remove from heat, cover and cool. Add crushed garlic and puree in a blender or food processor until smooth. Store.
