Taro Pancakes- I've been craving the idea of a taro pancake that is light and fluffy and I came up with this adaptation of various recipes. I think these came out quite well and they taste even better with coconut syrup.
Homemade Taro Chips -1 lb peeled taro, Kosher (or Hawaiian) salt, to taste Olive oil, for brushing +++ Bake in 400 F oven for 20 minutes until edges are crisp. Season with extra salt if desired. --I tried this w/the mandolin but could not get it thin enough for a fully cooked appetizing chip
