Elk Roast Dry Rub: Coffee and Brown Sugar Rub for 24 hours. Then seared it in a 10 1/4 cast iron skillet with butter and a little more brown sugar. Sliced it like a tri-tip. RUB: Ground Dark Roast coffee, dark brown sugar, chili powder, paprika, coriander, oregano and kosher salt.

TRI TIP RUB INGREDIENTS 2 to 3 pound tri tip roasts. 1 tablespoon chili powder 1 tablespoon ground cumin 1 tablespoon fresh ground black pepper 2 teaspoons onion powder 2 teaspoons dried oregano 1 teaspoon garlic powder - Brown first on saucepan. Then put in 225 oven and slow-roast for 2 hours.

Oven roasted beef tri-tip

OVEN ROASTED TRI-TIP. This recipe is fabulous. My husband is from the west coast & tri tips are not very well known on the east coast (where we currently live) and he raved about this!
