Turkey Gravy: Collect drippings from roasting pan & cool in fridge 10mins to separate. You'll need 4T (1/4c) butter or turkey fat, 1/4c flour, 1-1 1/2c turkey dripping liquid, & 1c veggie stock or water. Melt butter or turkey fat in a large saucepan over medium heat. As soon as the fat melts, add flour & whisk to combine. Let cook, continuing to whisk, for a minute or two. Add in the dripping liquid, and whisk to combine well. Thin with stock.
