Sheep's Milk Wensleydale cheese. Sheep's Milk Wensleydale is an exceptionally smooth, creamy Wensleydale cheese with a clean, milky flavour, handcrafted from pure sheep's milk. Interestingly, the very first cheese made by the Cistercian Monks, when they settled in the Wensleydale in 1150, would have been made using sheep or goat's milk.
