Hamachi Cure Uchi, Austin Chef Tyson Cole spent months experimenting with curing and smoking yellowtail tuna until landing on a winner: first a half-and-half sugar and salt cure with anise and coriander, then an applewood cold smoke. The dish has been a long-time standard on his menu, picking up the nickname “Japanese nachos” over the years.
