Cauliflower and quinoa salad 1/3 cup quinoa, rinsed and drained 300g cauliflower, coarsely grated 250g cherry tomatoes, halved 1 small red onion, finely chopped 150g red capsicum, diced 1/2 cup mint, finely chopped 1/3 cup hazelnuts, toasted, coarsely chopped 1 tbsp lemon juice 1 tbsp olive oil cracked black pepper Combine quinoa with remaining ingredients in a large bowl. Season with pepper and toss well, then serve.
