Gluten Free & Low Carb Zucchini Lasagna // This is a very good recipe. However, I would not grill the zucchini first. It made the zucchini rubbery. Its VERY delicious but next time I will just use fresh zucchini.
Cucumber Salad: Great side dish for only 50 calories. Ingredients - 1 large cucumber 2 tsp coarse sea salt 1 Tbsp light sour cream 1 tsp finely chopped onion 1 tsp fresh dill chopped 1 tsp vinegar 1 tsp sugar - could use yogurt instead as well
Zucchini Corn Fritters with Basil and hemp seeds- These are great for breakfast, brunch, or snack. The basil gives a nice refreshing flavor. These fritters are so flavorful that they don’t need any sauce. I would replace the oil for coconut oil.
