From Borscht to Chlodnik, Ciorbă de Sfeclăto to Shorba Alassal, beetroot soups are loved around the world. And luckily they grow really well in Scottish vegetable plots, especially ours! This vibrant and nourishing soup celebrates the beetroot’s earthy flavours and vibrant colour. And once you’ve made it, it’s a recipe you’ll keep returning back to time and again.

Serves 6

Ingredients
1tbsp vegetable oil
1 onion, chopped
2 sticks of celery, diced
1 carrot, diced
3 beetroot, diced (keep the stalks and leaves)
1 potato, diced
2 garlic cloves, finely chopped
1 ½ litres beef or vegetable stock
½ green cabbage, finely shredded
2 tomatoes, chopped
