I love these fried, but they do not travel or keep well that way. So, dehydrating them is a good way to make them more healthy and mobile. Use a Plantain that is yellow and starting to spot. Slice plantain and put onto a dehydrator sheet. Sprinkle with salt. Dehydrate on 135F for about 3-4 hours and then flip them. Then dehydrate until firm, but still pliable. For longer storage, store in a glass jar with lid. Otherwise a Ziploc bag will do.
