What you need:
200g Mushrooms
1/2 Red Onion 
1 Garlic Clove 
100g Baby Spinach 
2 Egg Beaten 
20g Grated Cheese
Sriracha 
1 Piadina or Wrap
Olive Oil 
S&P 

What to do:
Heat 1tbsp olive oil in a pan, add garlic & onion and cook for 3-5 mins over low heat until softened.
Add mushrooms, season well and cook until golden. 
Pour in egg and cook for 3-5 mins until egg had set.
Place piadina on top and flip over with a plate.
Top with spinach, cheese and sriracha, heat until cheese has melted.
Fold over and serve with sides of choice.
