Native Finger Lime Pink Ice (microcitrus australasica). Like citrus caviar, this native Australian finger lime is packed with translucent pink vescules, bursting with flavour. The slender fruit can reach 12 cm, sheathed in a dark magenta skin. An understory native shrub that grows best in dappled light. The tangy pink vescules separate without splitting, making a uniquely decorative garnish, or float them in gin for a summer treat!
