Mushroom & Spinach Quesadilla
5min · 2 servings Ingredients • 1 tbsp cooking oil • 5 ounces sliced mushrooms • 1 & 1/2 cups spinach • 1 garlic clove minced • Pinch salt • 1/4 cup shredded mozzarella (per quesadilla) • 1 tbsp crumbled feta (per quesadilla) • 2 tortillas (per quesadilla Instructions • add oil to a pan over medium high heat. Add in mushrooms and sauté till they are golden and reduced in size. Add in minced garlic and spinach sauté for another minute till spinach is wilted. Season with salt and remove mixture. • Add tortilla to pan and flip once. To the hot side add mozzarella, mushroom spinach mixture, more mozzarella and feta crumbles.
