MINI APPLE PANCAKES 1c wholemeal flour 1-2 eggs 1c milk 1 lg or 2 sm apples 25g butter/coconut oil -Whisk flour, eggs & milk in a bowl. -Peel/ core apples, cut in 8 parts, slice thinly & combine in batter. -Melt small amount of butter/coconut oil in frying pan, low-med heat. When warm, pour small amounts of batter, making 3 mini pancakes. Flatten any apple slices that are sticking up. -Fry on one side until golden (2 min, usually until top is just dry), then flip & fry for another 1-2 min.
