Apple Pie Filling for the Freezer

FREEZER APPLE PIE FILLING 24 c sliced peeled baking apples (6-7 lbs) 3 Tbsp lemon juice 4½ c sugar (I use half brown sugar, half white) 1 c cornstarch 2 tsp ground cinnamon 1 tsp salt ¼ tsp ground nutmeg 10 c water Set aside apples in juice. In large pot on med heat boil water w/ sugar starch cinnamon salt nutmeg for 2 mins stirring constantly. Add apples reduce heat cover simmer about 6-8 mins. Cool 30 mins. Ladle into bags continue to cool 1-1½ hrs. Freezes for 12 months. Yield: 5 pies
