Beetroot & Onion Pickle 600gm raw peeled Beetroot, 500gm Onions. Mince in food processor. Place in pot. Add 3/4 tsp plain salt, 500 gm sugar & 1 dsp pickling spice (tied in muslin) or 1 tsp dried mixed spice. Just cover with vinegar, boil till tender. To thicken mix 1 tblsp plain flour with a little vinegar & gradually stir in. Simmer 5 mins. Pour into warm sterilized jars & cover when cool with air tight lid.
