Heritage China at Country Christmas High Tea.

Add to your high tea by using beautiful china plates, cups and saucers. No mugs for this event! For these special events I bring out my mother's and grandmother's heritage china, as well as those from my husband's family. You can source items from second hand stores or opportunity shops, or antique stores.

Chocolate Sponge at a Country Christmas High Tea

Everyone loves sponge cake! And for a special occasion make it large, and fill it plenty of whipped cream, decorating the top with fresh berries. Make sure you have washed the berries earlier and dried them on paper towel as you dont want any moisture making the cake soggy!

Special treats at a County Christmas High Tea.

Provide a variety of small treats, savoury and sweet placed on pretty serving dishes- smoked salmon blintzes, shortbread, plain and dipped with chocolate, melting moment biscuits with passionfruit fillings. Its's time to be extravagent with flavours and garnishes. This is a special occasion!

It's time to bring out special teapots and provide a wide selection of teas. English Breakfast is the favourite, but perhaps add green, peppermint, lemon and ginger, even a berry or other fruit tea. Provide milk in pretty serving jugs.
