On the menu this week👇 AD. For me, meal prepping isn’t about “dieting” or being “restrictive”; it’s about making life easier while aiming to fuel my body with diverse nutrients. For some, this may look like prepping some veggies or salad ingredients for “quick construct” meals, however for others that may look like actually prepping some meals and/or snacks. By prepping just a few meals ahead, I keep it simple while aiming for variety, for the remainder of my week. (via-kalejunkie)ig Ingredients: - 8 eggs - ¼ cup red onion, finely diced - 1/4 cup parsley, finely chopped - 1/4 cup chives, finely chopped - 4 pickles, chopped - 1/2 cup mayo or greek yogurt - 1 tbsp dijon mustard - 1 tsp salt & 1 tsp ground black pepper Directions: 1. Boil and peel the eggs. Once cooled, mash them and add to a large bowl. 2. Mix in the red onion, parsley, chives, pickles, mayo, mustard, salt, and pepper. 3. Dumpling salad in 15 minutes
Here’s how to make it: 1 bag frozen dumplings (I’m using tofu & vegetable ones from bibigo) 4 tablespoons soy sauce 4 tablespoons vinegar (apple or rice) 4 tablespoons chilli oil 2 tablespoons sesame oil 2 tablespoons granulated sugar 1 tablespoon garlic, minced 1 tablespoons ginger, minced 250g mixed tomatoes, chopped 1 bunch of scallions (greens only) 1 small bunch of coriander, chopped 2 tablespoons sesame seeds Mix soy sauce, vinegar, chilli oil, sesame oil, sugar, garlic and ginger in a a small bowl. Slice the scallions lengthwise and add to cold water with the coriander. Fry the dumplings in a bit of oil until golden brown, add ¼ cup of water and steam with a lid for 5 minutes. Add tomatoes, dumplings, greens and sesame seeds to a large bowl. Toss with the sauce!
