You won’t believe that this meatloaf and gravy are made from PLANTS 🌱
This is a lentil and mushroom “meatloaf” with a creamy butter bean “gravy”, mashed pumpkin and roasted broccolini. Lentil & Mushroom Meatloaf: - 1 Cup Button Mushrooms - 1 Can Brown Lentils (Drained & rinsed) - 1 Cup Quick Oats (GF oats for gluten-free option) - 1/2 Cup Walnuts - 3 Tbsp Nutritional Yeast - 2 Tbsp Flaxseed Meal - 1 Tbsp Olive Oil - 1/2 Brown Onion (Diced) - 1 - 2 Cloves Garlic (Diced) - 2 Cups Diced Carrot (Roughly 3 small or 2 large carrots) - 1/2 Cup Tomato Paste - 2 Tbsp Tamari - 1 Tbsp Balsamic Vinegar - 1 Tbsp Rice Malt Syrup - 1 Tbsp Fresh Rosemary (Diced) - 1 Tbsp Fresh Thyme (Diced) - 1 Tsp Smoked Paprika - Pinch of Salt and Pepper Meatloaf Tomato Glaze: - 2 Tbsp Tomato Paste - 1 Tbsp Balsamic Vinegar - 1 Tsp Tamari - 1 Tsp Rice Malt Syrup - 1 Tsp Dijon

It does take some time to make but actually it’s super easy and the result is 100% worth it! ☺️👌  💡HACKS  Prepare this on the weekend and store it in the fridge that you have it in hand during the week.  You can put it sauces, fry with spices, use on sandwiches...just like you’d prepare chicken.  Much love  Maya ✨  RECIPE (4 servings each 270cal/36P/19C/2F):  -1 can (220g) chickpeas  -1/3 cup + 1 Tbsp (90ml) water  -2 Tsp poultry seasoning  -1 Tsp salt  -1 Tsp garlic powder  -1 1/2 cup (180g) vital wheat gluten  -4 cups (1L) veg stock (for simmering)  BLEND the chickpeas, water and spices for 2-3mins in a food processor/ADD vital wheat gluten, BLEND for another 2-3mins/KNEAD for 2

THE BEST VEGAN BACON RECIPE🌱🥓 Ingredients 1 package of smoked tofu 2 tbsp olive oil 2 tbsp maple syrup 2 tbsp soy sauce 1 tbsp sriracha 1 tbsp corn starch Method 1. Preheat your oven to 425F. 2. In a large bowl, combine olive oil, maple syrup, soy sauce, sriracha and corn starch. 3. Using a peeler, peel your smoked tofu into the marinade. This is key to get really thin strips! I prefer a Y shaped peeler. Toss the smoked tofu gently to evenly coat in the marinade. 4. Place the smoked tofu on a parchment lined baking sheet and bake for 10 minutes. Flip the tofu around and bake for another 5-10 minutes. It should be crispy at this point, not burnt so watch carefully. Remove and let cool slightly and enjoy as is, on a BLT, Caesar salad or wherever you enjoy bacon!
