Really enjoying being back to healthy eating again. My digestion issues have eased up 99%  and my energy levels are improving every day. So happy right now.   Today's breakfast: Wholemeal toast with cottage cheese, sliced avocado, tomato, spinach leaves & topped off with shavings of smoked salmon. Tonight's dinner:  "Hulk Pancakes" - Recipe from @My Food Religion's blog.   Pancakes:  Almond meal Wholemeal Spelt Flour Zucchini Spinach Eggs Almond milk Salt & Pepper  Chicken & Mushroom Sauce:  Chicken & onion diced, brown in pan. Add in mushrooms & can of coconut milk.
