Making this right now- Clean eating Egg muffin. Made enough for 12 muffins: pepper, 1 cup mushrooms, 2 cups chopped spinach. Used 1 dozen whole organic eggs .cups were to the top when I put them in the oven. Set oven timer for 20 minutes to check.
Clean Eating Banana Pancakes: used only one egg, added 1 tbs flax seed and 2 tbs rolled oats, cooked with coconut oil on the griddle and served with natural peanut butter and maple syrup---was delicious!
