Great cauliflower soup recipe! Some modifications: use unsalted butter (a little less than what was required turned out fine), add some pepper, no addtl salt needed, next time don't add any half & half.  Didn't try it with the sour cream.  It would probably be good blended too!

Creamy Roasted Red Pepper and Cauliflower Soup with Goat Cheese -- This is awesome! I made a batch on Sunday for my meals for the week. I added a can of garbanzo beans for extra protein and split it up into 5 servings. Only 273 calories!!

Used 2 bags frozen cauliflower. Added 1tbsp parsley. Cut milk in half and did 1 cup cream. So delicious!
