creamy polenta & mushrooms - made with cremini and shiitake mushrooms, tasty. Mushrooms need more time than is called for, the polenta we had needed less, but no big deal. We added artichokes at the end to the mushroom mixture.
Zucchini Corn Fritters with Basil and hemp seeds- These are great for breakfast, brunch, or snack. The basil gives a nice refreshing flavor. These fritters are so flavorful that they don’t need any sauce. I would replace the oil for coconut oil.
