Ritz Cheddar Chicken: I've made this twice now- NOT low fat but delish! 350. In a bowl, combine 1 sleeve crushed ritz crackers, 6 oz grated sharp cheddar cheese, 1 clove chopped garlic, and 1/4 tsp each salt and pepper. Dip the chicken in melted unsalted butter, then in the cracker mixture, pressing to help it adhere. Place on foil lined baking sheet. Sprinkle with remaining cracker mixture and butter. Bake until chicken is golden brown and cooked through. 25-30 min.
