This seafood paella recipe is really special. It’s not quite a traditional paella recipe, but it’s packed with good stuff – chicken thighs, garlic, saffron, king prawns, mussels and lots of lovely lemon.

Ingredients

Meat
• 6 Chicken thighs, free-range bone in skin on
• 100 g Chorizo, quality
• 6 Rashers of higher-welfare pancetta or smoked streaky bacon
Seafood
• 10 Shell-on king prawns, large raw
Produce
• 1/2 bunch Flat-leaf parsley, fresh
• 4 cloves Garlic
• 1 Lemon
• 1 Onion
• 2 handfuls Peas, fresh or frozen
Canned Goods
• 2 Litres organic chicken stock
Pasta & Grains
• 500 g Paella rice
Baking & Spices
• 1 heaped tsp Paprika, smoked
• 1 Plain flour
• 2 large pinches Saffron
Oils & Vinegars
• 1 Olive oil
