Baked Chickpea Cakes: 1 can/2 c. cooked chickpeas, 1/2 c. chop.onion, 1/2 c.shredded carrot, 1/3 c. seasoned bread crumb, 1/4 c. Italian salad dressing, egg. DO: Heat to 375°. Spray baking sheet. Mash chickpeas coarsely. Stir carrots, onion, bread, dressing, egg. Mix well. Shape small patties using about 2 T. Bake 15 to 18 minutes, turning halfway through baking time until lightly browned on both sides.
