sesame noodles with edamame and kale-AMAZING! very easy. i used baby kale and sauteed it in garlic and a drop of oil and then added water to steam it so that my toddlers would eat it. i used 3 bundles of buckwheat noodles and i only used 1/2 the cup of reserved noodle water. the sauce is awesome.
Spinach and Quinoa Salad with Grapefruit and Avocado
This salad is loaded with vitamin C, A, Potassium and good heart-healthy fats!! There is something wonderful to me about biting into a salad with grapefruit. It's juicy and refreshing and lends a sort of bitter-sweetness to each bite.
