Judan-Jikomi Sake  Sophisticated premium sweetness and fruity bouquet are the gift of rice.  “Judan-Jikomi” is thoroughly brewed by fermenting at a lower temperature, and adding steamed rice and rice koji with great care and attention to the main fermentation mash in ten stages (judan) of brewing, which takes twice as long as the standard types of sake.  “Judan-Jikomi” can be called sake’s equivalent of noble late harvest wine made from rice, because of its mellow flavor and rich aroma.
