Directions: For filling, heat heavy cream until warm. Remove heat + whisk in the chocolate and espresso powder until smooth. Refrigerate 1 hour. Beat filling until fluffy. Scoop into a bag, cut corner. Pipe filling onto 1 cookie, then press 2nd on top. Good for one week!
