But my light Eggplant Parmesan has all the delicious and traditional flavors but for just 5 Points + per serving! And did I mention that this is made with three kinds of cheese? Oh yeah…and the eggplant is breaded. It is DELICIOUS.

Forgot about the holiday and didn't brine my own corned beef like last year. But this is an easy, pleasing recipe and we very much enjoyed it. Comfort food all the way!
