BBQ Chicken Quinoa Salad - my healthy dinner tonight. At first bite I thought it might need more flavor but after giving it a minute I found it to be nutty, spicy and very tasty. Lastly, the salad part will double nicely as a burrito filling.
Heart Healthy Stuffed Peppers- Pinner would recommend more of the meat mixture, especially if you have larger sized peppers. Also I'd add less sauce next time because it was too watery after being in the oven that long. Very delicious though!
