Slow Cooker Italian Beef Sandwiches 2-3 lb bottom round beef roast 1 Cup Beef Stock 1 packet Italian Salad Dressing Mix ( I used Good Seasons) 1 jar pepperoncini rings 1 loaf crusty french bread Place roast into the slow cooker. Add 1 cup beef broth and Italian salad dressing mix. One hour before the roast is done add the peppers to the slow cooker. Total cooking time should be about 8-10 hours on low. Serve on crusty french bread.
16 oz plain yogurt; 2 cucumbers peeled, seeded and diced; 2 Tbs olive oil; 1/2 lemon, juiced, 1 Tb dill; 3 garlic cloves, peeled; salt and pepper to taste. Blend all ingredients, chill for at least 1 hr.
