Yum, this Chipotle Butternut Squash and Black Bean Burrito Bowl was nutritious and filling. Plus, every component was full of flavour! Best part - the yams I substituted for squash, baked and seasoned with cumin and chili powder.
Soo good! I made the following changes: lean ground turkey instead of tofu Only two chipotle peppers Extra clove of garlic Olive oil instead of canola oil tbs diced green chilies in place of Anaheim pepper.

This is a good recipe for a "sushi bowl". You can buy "sushi grade" fish at Coastal Seafood OR use tofu. Instead of sugar just use 1 tablespoon of honey and test for sweetness. Add carrots, cucumbers, radishes and other veggies!
