The BEST EVER Salty Herbed Smashed Red Potatoes ~ Boil in salted water 15 min. or until fork tender. Mash to break down like picture, sprinkle w/herbs and evoo. Bake 450 degree oven 20 min. Top w/Sour Cream and snipped chives. YUM!
Made these last night. They were yummy (especially bc the corn and onions ended up having a smoky flavor). Next time I'd definitely add some fresh guac and sour cream. We also sauteed all the veggies in a cast iron skillet.
