Tamale Pie! 1 Roll of prepared polenta, tomatoes, salsa (optional), black beans (canned is fine!), salt, cumin, garlic, green onions and cheese. Preheat the oven to 350 degrees. Crumble warm polenta in the bottom of a medium to small casserole dish. Top with black beans. Sprinkle with salt, cumin, and garlic. Add a layer of diced tomatoes (I used 3/4 of a very large can), then sprinkle with seasoning again. Finish with green onions and cheese. Bake for 30 minutes.

Grilled Broccoli. I think kids will even like this!! You can find the recipe on Allrecipes.com. I'll never boil broccoli again! I tinkered with the recipe and made it Asian-style with ginger, red pepper, soy sauce, rice vinegar, olive oil and black pepper. Yum!
RECIPE: Apple Butter BBQ Ribs - 2 racks ribs. 1 C apple butter, 1 C BBQ sauce, 1/4 C maple syrup, 1 tsp black pepper & chili & garlic powder, 1/2 C brown sugar, 1/4 tsp cayenne pepper, 1/4 tsp cinnamon, 2 tsp salt, 1/4 tsp pepper, 1/2 C apple cider. Bake in oven, meat side up, at 250 degrees F for 2 1/2 hours. Place meat side up on a medium (250 degree) charcoal grill for 1 hr. for smokey flavor.
