Almond Joy Butter

Pumpkin Spice Cake Bars peanut butter banana oat breakfast cookies {must give these a try} Almond Joy Butter Blueberry Trifles with Mascarpone Whip Casserole

Chocolate Pots de Creme (makes 6 small cups) - 1 cup / 240 ml unsweetened almond milk, 1 vanilla bean [split lengthwise & seeds scraped] or ½ tsp vanilla extract, 2 tbsps almond butter, 2 room temp egg yolks, 2 tbsps honey, pinch of salt, 3½ oz / 100g chopped dark chocolate. Serve with: ½ cup / 120 ml Turkish yogurt, 10 fresh raspberries, 1 small handful finely chopped pistachio nuts.

Spiced Ginger Cakes (makes 2 mini loafs / 1 regular loaf) - 3 eggs, 2½ cups almond meal, ½ cup honey, ½ cup melted ghee/butter/oil, 4 tsps ground ginger, 1½ tsp ground cinnamon, 1½ tsp ground nutmeg, 1½ tsp ground allspice, ½ tsp baking soda, ½ tsp salt. Rosemary Apple Butter (makes about 2½ cups) - 10 red apples [peeled, cored & coarsely chopped], ½ cup apple cider, ¼ cup honey, juice from one lemon, 3 cinnamon sticks, 3 sprigs of rosemary (or more depending on how big they are).

Gluten Free Raspberry and Almond Cake

Almond Raspberry Cake (7 inch cake) - 3 eggs, 1½ cups fresh raspberries, 3 cups almond flour, ½ cup honey, ½ cup coconut oil,1 tsp baking powder, ½ tsp salt. GLAZE: ¼ cup coconut oil, 2-3 tbsps honey.
