Cilantro Mashed Potatoes - Mash potatoes with potato masher or beat with electric hand mixer. Stir in sour cream, lime juice, butter and chile powder; beat until light and fluffy. Season with salt and pepper. Fold in cilantro just before serving.

Cilantro-Lime Rice Saute Onions 1 minute, add garlic and dry rice saute 2 more mins, Add veg or chicky broth, lime juice, green chilis, salt and pepper. bring to a boil, reduce to low, cover, simmer 20 mins w/out removing lid. Fluff when done add cilantro and more lime juice.
