I love this soup when it is chilly outside.It has a little spice but not to much. I have made it for a long time. I have never actually written it down until now. Truth be known I probaly make it different everytime.
Crock Pot soup: 1 can of Rotel tomatoes, 1 can of corn, 1 can of black beans (drained & rinsed), 2 frozen chicken breasts, 8 oz cream cheese, 1 packet dry ranch dressing, 1 tablespoon cumin, 1 teaspoon onion powder, 1 teaspoon chili powder. Put all ingredients in Crock Pot and cook 6-8 hours. Shred chicken, and enjoy!
Paula Deen's Cheesy Enchilada Soup - made this and it was fabulous! Like eat enchiladas in a bowl! I used shredded Colby jack instead of pepper jack so it wasn't too spicy for my 5 year old. She ate three bowls of it as did my hubby!
