Growing up, my mom's pumpkin empanadas were one of my absolute favorite Fall treats. Made with pumpkin, anise and Piloncillo ( cone-shaped lumps of Mexican style brown sugar). Lay down a bed of chili mixed with black beans and fresh corn, pave it over with a solid layer of light fluffy cornbread mix, pop it in the oven and when it's done you've got yourself a Cornbread Casserole, better know by me as a Tamale Pie!
