No ricotta - that's the American-Italian version. Though it requires patience to make, it is worth every minute. The ragu bolognese is melt-in-you-mouth tender and the sauce is rich and thick. • 1 kg Beef mince
Produce
• 1 Basil or parsley
• 2 Bay leaves, dried or fresh
• 1 Carrot, medium
• 1 Celery stick
• 2 Garlic cloves
• 1 Onion, yellow or brown white
• 1/2 tsp Thyme and oregano, dried
• 800 g Tomato, canned
Canned Goods
• 3 Beef bouillon cubes
• 1/4 cup Tomato paste
Condiments
• 2 tsp Worcestershire sauce
Pasta & Grains
• 350 g Lasagna, fresh
Baking & Spices
• 1/2 cup Flour
• 1 Pinch Nutmeg, freshly ground
• 1/2 tsp Salt and black pepper
• 1 Salt and pepper
• 1 tsp Sugar
Oils & Vinegars
• 1 tbsp Olive oil
Dairy
• 60 g Butter
• 2 cups Gruyere or colby cheese
• 4 cups Milk
• 1 1/2 cups Mozzarella cheese, tightly packed
Beer, Wine & Liquor
• 1 cup Pinot noir red wine
