I made this for a pre-Thanksgiving dinner yesterday and it was pretty yummy. I did add a bit more maple syrup to the dressing as the apple cider vinegar was a bit strong, but otherwise it was delicious.
It can be so difficult to judge an avocados ripeness! It seems like they go from unripe to brown so quickly. I discovered this genius trick to finding a perfectly ripe avocado and I'll never be fooled again!
