This works fine with a whole egg, just egg whites (FP if you reduce CO), and I've even made it with 3 leftover yolks instead of an egg or whites. I've experimented with it many ways, including the above egg methods and also adding cottage cheese, even! Test the batter for sweetness and preferred spice level. Don't put it in a very small ramekin, as it may overflow. ;-)

The Two Minute Pumpkin Pie (Paleo) - 3 tbs almond meal (or coconut flour) - 2 tbs coconut oil - 1 egg - 1/2 cup organic pumpkin puree - 1 tsp pumpkin spice - 1 tbsp honey - 1 tsp vanilla extract - a dash of salt - 1/2 tsp baking powder Place in a mug or a small microwave safe dish and microwave for 2 minutes.
