Rosemary & Garlic Roasted Pork  1 pork loin roast (about 2.5 - 3 lbs)  4-5 apples 1/4 cup olive oil  2 cloves garlic, minced  2 tsp thyme  2 tsp rosemary  salt & pepper, be generous with these!
