Whole chicken roasted in electric skillet. With olive oil, butter, potatoes, carrots, & onion. Browned on high with olive oil and butter, then turned with breasts up, cooked one hour at 390, checked with meat thermometer to make sure done. Checked in thigh and meaty part of breast.

Chicken Thighs with Shallots in Red Wine Vinegar. THIS IS DELICIOUS. I left out the wine (had none) and substituted green onions for shallots, because it was all I had. Served with couscous and frozen veggies because again - that's all I had.
Coconut Milk and Thyme Braised Chicken - Delicious and easy to make one pot chicken dinner cooked in thyme-infused coconut milk and garlic. This was SO GOOD, I may never go back to grilling chicken, again!
