Grilled Tequila Garlic Lime Flank Steak

You always learn something in a cooking class. In Molly Stevens roasting class, she opened my eyes to cooking flank steak low and slow. Never thought about braising flank but it certainly makes sense since it is a fibrous cut. We tend to grill it & cut it on the bias to mitigate the chew factor. I seared a piece this weekend in a skillet. Added about a 1/2 cup of wine & popped it into a 275 degree oven for about 50 minutes It came out 'a perfect medium' & so tender. Hooked on this…
